Good Things: October 16, 2011: gyoza [[fluffy works on folding some gyoza]] / I made gyoza for the first time in a while. / Filling: / 1 can lump crab meat / Zest of one lemon / 1 teaspoon of grated ginger / 1 green onion, minced fine / 1-2 teaspoons of mayonnaise / Combine all ingredients. Place a teaspoonful in the middle of a gyoza wrapper. Fold in half and pinch shut with pleats. / Fry in hot oil until golden brown. / Dipping sauce: / 1 part soy sauce / 1 part rice wine vinegar / 1 finely-sliced green onion1 pinch of crushed red chili flakes (optional) / A dash of toasted sesame oil / Combine all ingredients in a small bowl.

Good Things: October 22, 2011: Green chili stew [[fluffy stands over a bubbling pot, stirring it]] / 1 pound ground lean pork (or any other meat) / Several tablespoons of oregano / Several tablespoons of ground cumin / 1-2 cloves minced garlic / 8-12 ounces of green chili (pref. from Hatch, NM) / 4 cups vegetable or chicken stock / 4 cups water / 2 cans white/northern/cannellini beans / Brown the meat in a small amount of oil. Add the oregano and cumin and garlic; stir and continue cooking until the garlic smell blooms. Add the remaining ingredients. Bring to a boil and then let simmer, covered, on low for 15-30 minutes. Finish with a splash of white wine vinegar. / Add salt to taste, and thicken with a corn starch slurry or finely-crushed corn chips, if so desired. / Serve with tortillas, shredded cheddar cheese, and lime wedges.
